- First Wave: This was the boom of coffee consumption. Think big cans of pre-ground coffee in every household. The focus was on convenience and availability, not quality or flavour.
- Second Wave: This wave introduced the world to better-tasting coffee and the coffee shop experience. It was led by chains like Starbucks, which popularized espresso-based drinks like the latte and cappuccino and introduced the idea of the cafe as a "third place" between home and work.
The Defining Principles of the Third Wave
The third wave emerged as a reaction to the sometimes overly roasted and generic-tasting coffee of the second wave. It's defined by a deep appreciation for the entire coffee journey, from the farm to the cup.
- Traceability and Origin. Third wave coffee is all about knowing where your beans come from, not just the country, but the specific farm or region. This is often referred to as "single-origin" coffee.
- Artisanal Roasting. Roasting is done in small batches and is typically lighter to highlight the unique flavour notes of the beans themselves, like citrus, berry, floral, or chocolate, rather than the taste of the roast.
- Meticulous Brewing. Baristas are seen as skilled craftspeople. Manual brewing methods like pour-over, AeroPress, and siphon are celebrated for the control they offer over variables like water temperature, grind size, and brew time.
- Direct Trade & Sustainability. There's a strong focus on ethical sourcing, often through direct relationships with coffee farmers, ensuring they are paid fair prices for their high-quality product.
